Some Context

Omakase is a Japanese term simply translated to “chef’s choice.” The principle allows infinite evolution in any direction a Chef chooses to move in. Now let’s move together.

 

Chef Nick Iorio, the owner of Omakase VT (oh-MAH-kah-say), an Asian fusion restaurant with unique flavor and style, continues to thrive in a challenging space that requires countless hours of training, incredible attention to detail, and skills that are only acquired hands-on in the field. Over two decades working in the restaurant industry, while training alongside top-notch sushi chefs across the country from Burlington, Vermont to San Franciso, to Durango Colorado, Chef Nick found a place to call home.

You can find him today in Montgomery Center, Vermont just ten minutes away from Jay Peak Resort, turning his culinary goals into a lifestyle of his own. After spending several summers operating an Asian fusion summer food truck (he converted from an old tow-behind camper) centered around sushi, sashimi, and naigiri, and now poke bowls, Chef Nick started his own restaurant for year-round cuisine food services, including catering events, live music nights, sushi nights, and more. He built a new food truck too, and the summer tours are still active around the region.

 

Each season presents exciting ventures in outdoor recreation and soul-quenching restoration while hardly staying connected with “real world” matters and the stresses to pair. All scenarios considered, Nick didn’t skip a beat. When the opportunity presented itself to root down, the freedom of building a future in such a beloved area, surrounded by like-minded people with aligning interests, proved invaluable. 

 

Stop by Omakase at the Tavern for a delicious time, while appreciating an historical part of the area’s past. Enjoy it all, from Thai curries to Vietnamese pho’, Korean-style sandwiches to Japanese-inspired entrées, and traditional pub fare to sustain the load of a long day’s venture. The expansive menu checks off all the boxes slopeside mountain-goers and seasoned gastronomists desire. With fixings for all, a daily specials board, a kids’ menu, and cocktails galore, there’s a dish for everyone, with refreshments to pair including all your regulars, a range of whiskeys, sake, wine, and craft beers too.
